Big Island Butterfish

Modern Hawaiian cuisine is known for its fusion of the finest gifts of the sea with the rich and diverse culinary traditions of the Pacific Rim. Now, Troutlodge Marine Farms of Kona is bringing together the unique natural resources of the Kona coast with the latest technologies in marine fish culture in order to bring you Big Island Butterfish™.

Troutlodge Marine Farms of Kona is proud to be the first to offer fresh cultured Butterfish (Anoplopoma fimbria, also known as Sablefish and Black Cod) to the chefs of Hawaii's finest culinary establishments. This prized fish is branded as Big Island Butterfish™ to reflect the product's unique origins along the shores of Kona on Hawaii's fabled Big Island.

Normally found in the pristine cold, deep waters of the North Pacific, this fish is now being grown by Troutlodge Marine Farms of Kona in an environmentally-friendly land-based system atop the lava coast of Kona. Here the pure ancient seawater of the Kona depths is brought to the surface, where its ideal qualities are harnessed to rear this amazing fish.

Chefs will enjoy the freshness and versatility of this product, which is prized for its pearly white flesh, large velvety flakes and sweet, rich flavor. Harvested year-round, Big Island Butterfish™ can be delivered to your doorstep within hours of harvest. From there, an endless array of possibilities exist for you as you seek to provide your discerning clientele with the finest in Hawaiian cuisine.

Big Island Butterfish™ has already garnered acclaim by some of the finest chef's and restaurants in Hawaii, including being featured at the 2008 Kapalua Wine & Food Festival and as part of Chef Alan Wong's acclaimed Farmer's Series Dinner on multiple occassions. Big Island Butterfish has also been a featured item on the menu's of Roy's, Merriman's, and the Kona Village Resort.
